In preparation for the Mass Voter Registration exercise, the electoral body announces temporary jobs for 2, 878 officials countrywide.
The Voter Registration Assistants (VRAs), who will be based in the wards, will support the Constituency Registration Officers and Deputy Registration
Officers in registering new voters during the one month mass registration campaign that kicks off on 15th February, 2016. Applicants are required to be holders of at least a Diploma in ICT or other IT related field. An average of two officials will be required per ward. Applicants may access the full advert,
download application form from the IEBC’s Commission’s website.

They will be required to fill and send it to the nearest IEBC’s constituency or regional office on or before 15th January 2016.

 Yoghurt Cheese (Labneh)
  • Plain yoghurt
  • Or 1 quart (1L) milk & a packet of yoghurt starter
  • 2 cups (480 mL) whole milk (not ultrapasteurized or UHT)
  • 4 teaspoons (20 mL) distilled vinegar, lemon juice, or baker’s citric acid
  • Salt to taste (optional)
 Rennet Cheese
  • 1 gallon (3.8 liters) milk (not ultrapasteurized or UHT)
  • 4 drops rennet, diluted in ¼ cup (60 mL) cold water
  • 1/32 tsp (0.15 mL) mesophilic culture
  • ¾ tbsp (11 mL) non-iodized salt

Method 1 of 3: Yoghurt Cheese (Easy)

  1. You may skip this step and start with store-bought yogurt for an even easier recipe. But if you’d like a recipe that involves fermentation, you can make an extra-thick “yoghurt cheese” from scratch. To do this, add the following steps to the recipe:

    • Heat 1 quart (1 liter) milk to exactly 110ºF (43ºC) with the help of a cooking thermometer. Avoid UHT or ultra-pastuerized milk for best results.
    • Stir in one packet of yoghurt starter culture, available from cooking supply stores and online cheese-making stores. Alternatively, use 2 tbsp (30mL) plain yoghurt with live active cultures.
    • Instead of draining in the refrigerator as described below, let drain in a yoghurt maker for 12–16 hours. This keeps the yoghurt around 100ºF (38ºC), encouraging bacterial fermentation.
  2. Prepare a draining container. Line a colander with at least four layers of cheesecloth, and place the colander over a large saucepan. Spoon as much yoghurt as you like onto the cloth.

    • You can tie the yoghurt up in the cheesecloth and hang it over a pot instead.
  3. Refrigerate for 12–48 hours. The liquids in the yoghurt will drain away until you get a soft, cream-cheese like consistency. The longer you let the yoghurt drain, the thicker and more complex the cheese will be.

    • Optionally, you can occasionally smooth out the “cheese” with a spoon for a creamier texture.
    • Letting it drain at room temperature will speed up the process, but risks introducing harmful bacteria.
  4. Store the cheese. Once the yoghurt is done draining, transfer it to a ramekin or bowl, using another clean cloth underneath. Cheesecloth will leave a beautiful printed pattern on the cheese, but you may use anything you like. Eat before it spoils, usually within a week or so.

    • Optionally, stir in salt and herbs for a cracker topping, or sugar for a light dessert.
    • You may discard the whey or use it as a substitute for milk in baking.

Method 2 of 3: Acid-Set Ricotta (Moderate)

     Pour whole milk into a saucepan. You must use whole milk for this recipe. Non-homogenized milk gives the most flavor, but homogenized milk will work. Do not use milk labeled ultra-pasteurized or UHT.
  2. Stir acid into the milk. Stir in the acidic ingredient while you test the milk with a waterproof pH meter. Continue to the next step once the pH reaches 5.9–6.0.

    • Lemon juice adds a tangy citrus flavor. Fresh lemon juice has better, cleaner flavor than bottled juice.
    • Distilled vinegar is more precisely controlled, giving you predictable results each time you follow the recipe.
    • Baker’s citric acid adds less flavor than either of the other options, which some people prefer. Look for it at a grocery store or baking supply store.

    Heat the acidified milk. Slowly heat the acidified milk to 176–185ºF (80–85°C), while stirring constantly. It is very important to constantly stir the milk or it will burn. Keep it at this temperature for 15–30 minutes. Stop stirring once the milk separates into solid curds and liquid whey. Take care not to break the curds into smaller pieces.

    • An infrared thermometer is a reliable way to measure the milk temperature.

     Drain out the whey. Spoon the curds onto a thick, fine cheesecloth or muslin handkerchief. Squeeze the cloth around the curds to get most of the moisture out.

    • You can use a draining spoon if you don’t have cheesecloth, but you’ll lose some of the curds.
    • Optionally, you can rinse the curds in clean water for a more mild-flavored cheese.

    5 Eat or refrigerate. Let drain for five minutes for a “cream cheese” consistency, 15–20 minutes for a moist spread, and 2–8 hours in the refrigerator for a relatively firm cheese. Refrigerate all leftovers in a close container and eat before it goes sour, usually within 2–4 days.

    • To reduce the risk of harmful bacteria, do not leave the ricotta at room temperature for longer than 20 minutes.
    • Stir in salt for significantly more flavor and a slightly longer shelf life.

Method 3 of 3: Farmer’s Cheese from Rennet (Difficult)

  1. Purchase cheese-making cultures. You might find these in a grocery store, but more likely you’ll have to order it online from a cheese-making supply store. For this recipe and most other cheeses, use any mesophilic culture. These bacteria thrive in temperatures below 102ºF (39ºC). Their job is to acidify the milk and get it ready for the rennet. These “good” bacteria also make it more difficult for harmful bacteria to take hold in the milk.

    • As a last resort, you can use a dash of buttermilk instead. However, store-bought buttermilk is an unpredictable source of cultures. The cheese could fail to form, or the flavor could be affected.
  2. Buy rennet. Traditionally taken from animal stomachs, rennet is now available in vegetarian forms as well. You may use any type to form your cheese. The rennet will separate the acidified milk into curds and whey.

    • This is also available from cheese-making supply stores.
    • If using dry rennet, follow the label instructions to convert drops of liquid rennet into tablet amounts. Make sure the tablets are 100% rennet.
  3. Heat the milk in a non-reactive pan. Use an infrared thermometer to measure the milk, heating until it reaches 86ºF (30ºC). Non-chipped enameled pans or stainless pans are your best options. Stay way from copper and aluminum, which leach chemicals into your cheese due to the cheese’s acidity.

    • You may use raw milk or pasteurized milk, although cheese made from pasteurized milk may have trouble holding together. Ultra-pasteurized milk will not work
    • You can use milk with any fat percentage. Whole milk typically has a richer flavor than low-fat or skim milk.
  4. Add the bacterial culture. Let sit for two minutes. After two minutes, stir with an up and down motion to mix it into the milk.
  5. Cover and let sit. Leave the milk in a warm room away from light. The label on your starter bacteria may specify the length of this step. If it does not, or if you are using buttermilk, continue after two to four hours.

    • The milk should still look like ordinary milk. If it thickens, you’ve used too much acid or left it too long. (This is easy to do, since it’s difficult to predict exactly how active the bacteria will be.) You can still use it to make cheese, but it may have trouble staying together.
  6. Warm the milk and add the rennet. Heat the milk up again to 86ºF (30ºC). Dilute liquid rennet in ¼ cup (60 mL) cold water, or dissolve dry rennet in cold water according to label instructions. Stir just as you did with the culture, in an up and down motion.

    • Filtered water is less likely to interfere with the cheese-making.
  7. Cover and let sit for 4-12 hours. Leave it at room temperature, and completely undisturbed. You’re ready to continue once the cheese has formed a thick, custard-like curd. Ideally, a clean finger poked into the cheese should come out clean, and a clear, liquid whey should fill the hole. If it sticks to your finger, cover and try again in 30–60 minutes.

    • If it’s still not set after 12 hours, continue anyway. Your cheese may have trouble draining, ending up soft and wet.
  8. Drain some of the whey. Cover a colander with butter muslin cheesecloth. Place the colander over a pot to catch the draining whey. Spoon the solid curd into the colander. Stir gently with long, slow movements for about fifteen minutes, to allow excess whey to escape.

    • Fabric sold as cheesecloth is not always fine or thick enough to drain this cheese. You can experiment with other options, but butter muslin is your best bet.
  9. Cut into cubes and heat. Gently cut the curd into roughly equal cubes, without squashing it. Place these cubes in a double boiler (a raised pan inside a pan of hot water). Heat over very low heat, stirring frequently, until the curds reach about 100ºF (38ºC). This may take a full hour.

    • Don’t stop heating until most of the liquid is gone. The curds should hold their shape, but fall apart in your hand when you pick them up.
  10. Finish the cheese. When you are happy with the consistency, stir in the salt to halt the acidification and preserve the cheese. Optionally, you can shape the cheese, and/or mix in herbs, fruit, or nuts. You can eat it soft, or allow it to dry a little if you prefer.

    • Store the cheese in the refrigerator or another dark, cool location.
  11. Learn about other cheese recipes. You can create hundreds of different cheeses by using different bacterial cultures, rinsing the curd, draining more or less whey, aging the cheese, and other variations. Try your hand at mozzarella and cheddar, or talk to dairy farmers in your area to learn more.


  • Do not use cheesecloth on soft cheeses because it has large holes, and the soft cheese falls through. Butter muslin has smaller holes.
  • Some cheese recipes call for thermophilic bacteria cultures, which prefer warmer temperatures. You cannot use these in recipes that call for mesophilic cultures, or vice versa.
  • The acid-set method makes a cheese similar to ricotta, but using a more home-friendly process. A more accurate term would be “curd cheese.”
  • Each cheese, be it cheddar or mozzarella, or Colby, all use different cultures, and have different steps involved on making the cheese. For example, cheddar involves flipping the matted curds after draining (at 80 degrees) to create the acid. This is called the cheddaring process. Colby, on the other hand, is drained, and then dumped back into the pot and covered with water. This is a rinsed curd cheese.
  • Never leave your cheese out in the hot sun. It will spoil and will taste awful. It’s best to store the cheese in the fridge until ready to use.

Though the price was not all that good but  every farmer could  receive a considerable cash he is member of the  society which by then was managed by farmers who had  joined  together to form it. this society  also worked as a bridge between a producer and consumers.

Today, dairy farming made a turn ; due to Increase population  and  subdivision of  land to build  residential houses, as a result, it has  left most  families with a small portions of land which can only accommodate  a kitchen garden for growing  sukumawiki this has  made  alot of young  men and  women to move to other places in search of a job since nothing else in the area that  can be of income generating .

Dairy farming still being a challenge due to small land size .it  has  taken another twist where young men and women has realized that dairy farming can also  be conducted as a business. This realization, has been reached through creating awareness by the government and NGO  to local community on how to commercialize their small parcel that are available. This new farming  technology is done through Zero grazing where the  farmers is  required  only a store  and  a cow  shed  depending  on the  size ocow shedf  a farmer’s   herd . This has given  Nyandaruas’ people another opportunity of going back to dairy farming while using the new technology which is  more  reliable and profitable if  done  well with seriousness  .

The new technology also require a farmer to learn some technique to acquire knowledge and skills on how to run the farming business using  zero grazing thus makes maintenance  easier. Utilizing the small portion of land we have now  is the only  way in todays’ generation  that can save us and thus we make a lot of money from it.

Starting dairy farming business– The new technology, best fit when one is having two or four dairy cows for starters, and  then increase it  later as the  time goes , since after getting  familiarized  with the business or farming to run a large herd can be  possible.

For instance the Cow (New breed) is costing from kshs.100,000 to kshs. 200,000 and can produce 25 to 50 litres of milk daily, and these cows are being sold at KARI , or SACCOs’ and they sell with an insurance cover that makes it convenient and safe for a farmer to have one.

milkLet’s assume that a cow is producing a 24littres of milk per day and a farmer has two dairy cows from a loan of kshs. 200,000.Currently, the  price of  1littre milk goes for Ksh. 35 per if sold  to brokers  or  at milk processing plants and at a shop the price goes up to  Ksh.60 when selling it to the consumers.

  • 24litres for one cow x 2cows = 48littles
  • 48littres x kshs.35 = kshs. 1680
  • This is a one-day gross income
  • Kshs. 1680 per day x 30days = kshs.50,400
  • So one month gross income will be kshs.50,400

This cash is enough income to cater for the food shelter and health of the two cows and also pay workers and the remaining profit for food and loan repayment.

This has  been practically  witnessed by young people who are in Agri-Business rearing dairy cattle using zero grazing

  • Mix one egg white and one teaspoon of alum in a saucepan. Heat to 150 degrees Fahrenheit.
  • Soak the microfiber cloth in the egg and alum mixture.
  • Put the cloth on aluminum foil, and then place it into a 300-degree oven until the cloth is completely dry.
  • Take the cloth out of the oven and rinse it in cold water for 20 to 30 seconds.
  • Repeat the step above three times, and then let the cloth air-dry for 48 hours.
  • Now, use the cloth to remove scratches.

7. Silvo ,Brasso or other polishes

The Government has announced a new initiative with county governments to resuscitate the agricultural sector to reduce poverty and food insecurity. 

According to Ag. Cabinet Secretary, Agriculture Livestock and Fisheries Adan Mohamed the government will pursue the agenda through the Governors Round Table Forum that drives the agricultural agenda for counties.

He said the Government has already restructured agriculture sector institutions to respond to emerging needs at the county level.

Speaking during the official opening of the Nairobi International Trade Fair 2015, the Cabinet Secretary touted recent efforts as key to commercializing Kenya’s agriculture from the county level.

“The establishment of a vibrant national irrigation scheme which will free up more arable land for farming is a testament that the government is committed to fuel agriculture’s economic growth in line with vision 2030,” said Mohamed adding it will complement farming activities.

He added that livestock production will soon benefit from innovative ideas that will aid livestock farmers.

“A national livestock insurance scheme is underway and soon an acceptable livestock evaluation system will be introduced to make it easier for pastoralists to access credit,” said Mohamed.

With this system the Cabinet Secretary said livestock farmers can consistently check the quality of their livestock which in turn assuring better healthcare for the animals and improved prices for sale.

To complement the farmers efforts, he reiterated the government’s promise to  provide affordable credit, technology, inputs and marketing advice to help improve the incomes of at least 6 million farming families at county level and deliver desired economic growth.

He pointed out that Kenya’s potential for agriculture was not being matched by its output level insisting that the country had room for improvement.

“The agricultural sector has boasted a 3.5% growth in 2014, which is  a good feat on its own but still short of the Government’s intended 10% annual growth rate as stipulated in the Agricultural Sector Development Strategy (ASDS) 2010-2020,” he said.

The strategy, a guide for public and private sector efforts in overcoming the outstanding challenges facing the agricultural sector and stimulating access to and adoption of modern technologies for increased production and incomes.

He said the ministry is working in tandem with various agricultural stakeholders and County Governments to set up structures in place to enable quick response to demanding needs for farmers at the grass root level.

The CS pointed out that in line with direct initiatives through agricultural sectors the Government will support cooperatives at county level that work with farmers. “Good governance and management training will provide the assurance of prudent management of members’ savings to the public,” said Mohamed.

Agriculture is a key driver of the economic agenda in Kenya’s national blueprint Vision 2030.
